When the leaves outside turn golden and the scent of chestnuts fills the air, it’s time at the Guggital for autumn delights. Our seasonal menu is full of comforting classics, refined game dishes, and creative vegetarian and vegan surprises.

How about starting with one of our new drinks?
Ginger Lemon Gin – sparkling, homemade and wonderfully refreshingor alcohol-free: Ginger Lemon Refresher, just as fresh.
🥗 Starters to Welcome Autumn
For those who want to taste autumn from the very first spoon: our Chestnut Cappuccino, creamy and vegan.Prefer something heartier? Then try the autumn-marinated venison carpaccio or our lamb’s lettuce on beetroot carpaccio with Styrian pumpkin seed oil.
🍝 Autumn Specials from the Kitchen
Tempted by our homemade tagliatelle with wild boar ragout?Or perhaps a pumpkin risotto with roasted hazelnuts, vegan and full of flavour.A true vegetarian highlight is Franco’s pumpkin ravioli with sautéed porcini and caramelised pumpkin seeds.

Of course, autumn wouldn’t be complete without game. Try our roe deer schnitzel with creamy game sauce, the venison fillet wrapped in bacon with wild gin sauce, or the hearty hunter’s-style venison stew.
And if you’d prefer to enjoy all the flavours without meat: our house classic “Game without Game” – all the seasonal side dishes, served vegetarian.
For a special experience to share, we recommend the saddle of roe deer with two sauces, richly garnished and made for two.

For our guests who prefer meatless enjoyment, the autumn menu offers plenty of choice: Pumpkin risotto (vegan), Chestnut cappuccino (vegan), Franco’s pumpkin ravioli with porcini (vegetarian), Autumn flammkuchen with pumpkin cream, apple and hazelnuts (vegetarian, vegan on request)
